OPC belongs to the polyphenols, a large group of secondary plant compounds. Particularly impressive is the antioxidant power of OPC, with which it neutralizes free radicals in the body. Grape seed flour is a grape seed extract. The dried grape seeds are first partially oiled in a cold pressing process. The resulting press cake is ground into a powder, the grape seed flour. Grape seed flour imparts a savory nutty aroma to dishes and baked goods. It can be added to all flours in a ratio of 5 to 10%, such as spelt or kamut flour.
